Recipes by CRAVER CLUB No13:
↘ 1 ¼ cup all-purpose flour
↘ 3 tbsp cornstarch
↘ Pinch of salt
↘ 2 tsp pumpkin spice
↘ 2 tsp baking powder
↘ 110 gr vegan butter
↘ ¼ cup brown sugar
↘ ½ cup white sugar
↘ ¼ cup pumpkin puree
↘ 1 tbsp CRAVERS Hazelnut Butter
For the filling
↘ 2 tbsp CRAVERS Hazelnut Butter
↘ 1 tbsp pumpkin puree
↘ 1 tsp pumpkin spice
Whisk together the dry ingredients.
In a separate bowl, cream the butter with white and brown sugar until the color changes and it’s light and fluffy–around 2-3 minutes. Then add the pumpkin puree and CRAVERS Hazelnut Butter, and beat on low speed until smooth, around another 2-3 minutes. Fold in the dry ingredients. Chill the dough for 30 minutes in the fridge.
Once the dough is chilled, form balls, place them on a parchment-lined baking sheet, and bake at 400°F for 10 minutes. Take them out of the oven, flatten them with the back of a spoon, and bake for an additional 5 minutes.
Once they are out of the oven, let them chill for 5 minutes while you prepare your filling.
Mix all the filling ingredients and sandwich it between two cookies.
